For all the recipes I’ve saved, bookmarked or pinned, I’ve probably made… about 4? Seriously I’m useless at following recipes, and that’s probably why I’m particularly bad at baking. My excuses are ‘that takes to long’ or ‘I don’t have those things… and I’m not going to the shops to make paleo cookies, I have real food right here’. It just baffles me why so many ingredients get added, to these seemingly simple recipes, when using less can still wield insanely tasty tidbits. However, there are occasionally recipes that just make good sense.

For me, these are the ultimate brownies. Minimal ingredients, all things I always have on hand, and it goes without saying they are pretty good on the health side. It was the girls over at Purely Twins that prompted this bake sesh, but I did have to adapt the recipe slightly. Plantain became more pumpkin (and lets face it, who doesn’t have pumpkin in their kitchen right now?). Coconut butter became more coconut oil, and a little desiccated coconut. Vanilla extract, was forgotten, and drizzled on just before they went onto the oven. This is how Cat bakes. However botched my process was, I must say these were the best brownies I’ve ever made. I’m tempted to say best I’ve ever had, I just don’t think you’ll believe me.

The Ultimate Brownies (gluten free, idiot proof)

Ingredients

  • 230g pumpkin puree
  • 70g cocoa powder
  • 1 tablespoon desiccated coconut
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 2 tablespoon maple syrup
  • 80g coconut oil, liquid

Directions

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 8×8 baking pan with coconut oil.
  3. In a large bowl, stir together all the dry ingredients.
  4. Add in pumpkin puree, maple syrup and vanilla.
  5. Next add in coconut oil.
  6. Stir until all combined.
  7. Batter should be smooth and might have a slight oily look to it.
  8. Pour batter into pan and bake from about 20 minutes. Bake until toothpick comes out slightly clean. I used a chopstick, and the fact my kitchen smelt so good there was no way I was waiting any longer.
  9. Wait for them to cool. I did not do this. I scooped some out of my pan and had in a bowl with cream and more cinnamon. #theshame

Oh and I can recommend these out of the oven with lashings of coconut milk and a little cinnamon

To me, and to many others, I know the concept of pumpkin-based brownies isn’t that strange. The strangest thing with this recipe is the fact that I genuinely love it as much as (if not more) than ‘normal’ brownies. Worthy of a #strangebutgood link up perhaps?     I’m terrible at following recipes too! I just usually make things up…sometimes to disasterous results. These sound delicious, though!

      Haha I guess that’s all part of the fun eh! I’m realising it does take practise… and a sense of humour for those disasterous ones!
